Healthy Breakfast Muffins!

If you, like so many of us, are home and heeding those government warnings to limit contact with others – you may be thinking about how to shore up your immune system against this scary pandemic.

I’m no doctor, but I do know my way around a kitchen! So here’s my totally homemade recipe for healthful and delicious muffins. These contain ZERO refined sugars or empty white carbs, and nourish your body (and your soul!) with yummy goodness. I think we all need a little bit of that right now, don’t you?


  1. One whole lemon, quartered

  2. Six – Seven medjool dates, pitted

  3. 2 RIPE bananas, fresh or frozen

  4. 1 tsp vanilla

  5. 1 cup water

  6. 1 cup old fashioned oats

  7. 1 cup whole wheat flour

  8. 1/2 cup cornmeal

  9. 1 tbsp flax seed

  10. 1 tsp baking soda

  11. 1 tsp baking powder

Pre-heat oven to 350 degrees, and use shortening or cooking spray to lightly prep a standard sized muffin tin.

Place lemon, dates, bananas, vanilla and water in food processor and blend on high power. This will take a few minutes to get nice and smooth. Be patient!

Once that’s nice and smooth, add remaining ingredients and again blend on high for several minutes, or until smooth.

Using an ice cream scoop, generously fill each muffin tin with batter and bake for about 20 minutes, or until firm and golden. Let cool on wire rack before serving.

This step is important – the flavors continue to come together as the muffins cool. This is definitely best eaten room temperature. If you eat this warm, it will be fine, but it won’t be as flavorful as it could be!
